This waffles brunch recipe is a very nice and easy recipe, and perfect for a weekend breakfast or brunch, or even supper!

The waffle recipe was kindly shared by one of our Lovefoodies friends, Betty Bernard. Betty told me her family loves her waffles and pancakes (which is from the same recipe), so I thought I had better give it a go!

I have adapted the recipe slightly to make it lighter with no sugar and butter, but I will add at the end of the ingredients some optional changes you can make to suit.

I've also separated the egg yolks from the whites and whisked the egg whites separately in order to incorporate a lot of air, which in turn will give you incredibly light and fluffy waffles. 

Here, I made a poached egg and added a slice of cheese on top. You could also add a slice of ham and more cheese, depending on how your family likes their meals.

It's very flexible and I hope this will give you some nice ideas to make something easy and delicious.

Ingredients

For the Waffles:

1 and ¾ cups or 220 g All-Purpose Flour
2 teaspoons baking powder
1 teaspoon salt
2 eggs, separated
1 cup or 235 ml Buttermilk
1 cup or 235 ml milk

*for the milk and buttermilk, you can use fat-free or low fat, choose to your liking

***Optional extras for the waffles
6 Tablespoons melted butter
5 tablespoons sugar (if making sweet waffles)

For the topping:

Eggs - as many as you like
Slices of cheese. I used Leerdammer
Salt & pepper
A dash of cayenne pepper and or a sprinkle of your favorite herbs. I used Dill

Instructions

1. Make the waffles by adding all the ingredients to a bowl except the egg whites.

2. Lightly whisk the egg whites in a separate bowl until fluffy. You can do this by hand, it doesn't take long at all.

3. Fold in the egg whites to the waffle batter until combined.

Notes:

If the batter is too thin, add a tablespoon of flour, and if the batter is too thick, add a tablespoon of extra milk. Adjusting the batter until it has the consistency of very heavy cream

4. Cook the waffles using your waffle machine and keep warm in a low oven whilst you poach the eggs.

5. To poach the eggs, cook them to your liking. Some like runny, some like well done! See here if you would like to see how to make perfect poach eggs

6. When your eggs are ready, take the waffles from the oven and arrange them on plates. Then add the poached eggs, a slice of cheese and salt, pepper etc and serve warm.

***If your cheese does not melt, pop it under the broiler / grill for a few seconds.
