The taste of almond and cherry is such a sublime combination and certainly tickles your taste buds. Add to that the creamy frosting and the crunch from the almonds on the topping, you really do get a lovely tasting cake.
The cake is soft and moist, and the addition of the cherries in the cake itself just adds another texture and flavor dimension. The texture of the cake is soft and not dry at all. With each bite, the cake crumb just melts in your mouth.

The cherries in the cake and sprinkled on top of the frosting make for a delicious sweet treat. The cherries I've used in this recipe are glace cherries which are coated in a sugar syrup. You often see them in abundance over the Christmas period as many people use them to bake Christmas Cakes.
You can also find them in the drinks section of the supermarket as they're also sometimes used in cocktails! But mostly, they can be found in the baking section.
This cake is very easy to make and will suit for any occasion, such as a party or simply to have with a cup of tea or coffee in the afternoon with a friend. If you're making this cherry almond cake for a birthday party, imagine it decorated with candles and sparklers! It will look absolutely fabulous!
You will see I've made this recipe using a square baking pan. Of course, feel free to use a round pan or whatever shape suits you!.

Ingredients
¾ cup or 175 g softened butter
¾ cup or 175 ml milk
1 ½ cups or 290 g regular sugar
3 eggs (lightly beaten)
1 Teaspoon almond extract
1 cup or 100 g Plain / All purpose flour (sieved)
1 cup or 100 g Ground Almonds
1 tsp baking powder
½ tsp salt
1 Cup or 180 g Canned or Glace Cherries, halved
The Cream Cheese Frosting:
8 Tablespoons Butter (room temperature)
½ Cup or 100 g Powdered / Icing Sugar
16 oz or 500 g Full-fat Cream Cheese (room temperature)
4 Drops of Vanilla Extract
***NOTE: The quanitity for the frosting is for a thick layer. Half the quantities if you prefer less frosting
The Topping:
2 Tablespoons Flaked Almonds
4 Tablespoons Cherries, roughly chopped or halved
Instructions
The Cake
1. Preheat the oven to 180 C 350 F Grease an 8 in square cake tin and line the base with baking parchment.
2. Cream the butter and sugar together until pale and fluffy. Beat in the eggs, one at a time.
3. In a separate bowl, thoroughly combine the flour, almonds, salt and baking powder. Add half of this to the egg mixture, along with the almond extract and half of the milk, and fold in.
Then repeat with the remaining half of the flour mixture and then remaining mik. Finally, lightly coat the cherries with a tablespoon of flour then dust off and combine to the cake batter.
4. Spoon the batter into the prepared cake tin and smooth the top with the back of a spoon.
5. Bake for 35 minutes, or until the cake is golden-brown.
Leave in the tin to cool for five minutes, then remove and transfer to a wire rack to cool completely.
The Frosting
1. Add all the ingredients to a bowl and whisk until combined and smooth.
2. Spread the frosting over the cake once the cake has completely cooled.
3. Sprinkle the almond flakes and chopped cherries on top of the frosting and a light dusting of powdered sugar if desired.
