This delicious recipe has been generously shared by one of our great cooks, Adelenne. She's always coming up with great recipes which she either invents herself or adapts from various cookbooks to make her own.

Here, we have Adelenne's recipe for her Easy Marble cake which she has made several times since it's always a family favorite.

Making marble cake is easy! There is nothing complicated, you simply make one batch of batter and then divide it into as many different flavors or colors as you like.

For this recipe, we've gone with the classic chocolate and vanilla recipe, and once we divide the batter up, you add chocolate to one and keep the other as plain vanilla. Then you combine both the batters in one single baking pan.

To give you an idea, we have done a strawberry and vanilla marble cake, and also a chocolate latte cake, which is made up of vanilla, chocolate, and coffee cake. Be sure to check them out so you see what the marbling looks like in those cakes.

You can eat marble cake for breakfast, brunch, afternoon tea, to serve as a dessert with some ice cream, or to take along to a potluck or picnic.

At the end of the recipe, we've got an optional chocolate mousse frosting which you can make if you wish.

It is very rich, so maybe if you're making this for breakfast, we suggest you skip the frosting! But for a dessert or a party, then you certainly should make the frosting.

At least you can choose what you prefer and for what occasion!

Ingredients

The Cake :

1 cup or 250 g butter, softened
1 cup or 200 g castor sugar / superfine sugar/bakers sugar
1 ½ cups or 190 g cups AP flour
2 tsp baking powder
4 eggs
2 tsp vanilla
¼ cup or 30 g cocoa powder
¼ cup or 60 ml milk

The frosting:

2 cups of whipping cream
2tbsp of butter
1 cup of chocolate chips
2 tbs powdered sugar
Hershey's Chocolate Sauce (optional for drizzling on the top)

Instructions

1. Preheat oven to 180C, 350F, Gas 4. Grease and line a loaf tin.

2. Sift flour and baking powder.

3. Beat eggs and add vanilla to a bowl.

4. Cream butter and sugar till light and fluffy.

5. Add egg mixture, a little at a time.

6. Add half the flour, then milk, then the rest of the flour.

7. Divide cake batter mixture into 2 bowls.

8. Sift cocoa into one of the bowls and mix.

9. Alternate spoonful of vanilla and chocolate cake mixture into the tin.

10. Use a skewer to swirl around the mixture.

11. Bake 35-45 mins or until the skewer comes out clean.

For the Mousse Frosting:

1. Put the cream, butter, and chocolate chips in a heavy-based pot and heat till smooth. Let cool completely.

2. Using a mixer with a paddle attachment, whip the chocolate mixture with the sugar until fluffy.

3. Spread on the top of the cake and sides.

For serving you can also drizzle some Hershey's Chocolate Sauce for an extra hit of chocolate!
