Crispy Fried Chicken, a delicious recipe with a lovely seasoning mix to give you THE BEST Fried Chicken in town!
Here, Nicky Mercer shares her family recipe, and it certainly gets the thumbs up every time she makes this! There's a lovely blend of spices and a crispy outer which will leave your diners wanting more!
Nicky has used chicken thighs in her recipe, but of course you can use what ever cut of chicken you prefer. Just check on the done - ness as all meat varies in thickness.

Recipe by Nicky Mercer
Prep Time: 15 minutes
Cook Time: 30 minutes approx
Yield: 4 pieces
Ingredients:
4 portions of chicken. Here I used 4 chicken thighs
The Chicken Coating
1 Cup All Purpose Flour
1 tsp chipotle chilli powder
1 tsp salt
½ tsp black pepper
¼ tsp onion powder
¼ garlic salt.
2 eggs, beaten (you may need more)
Instructions:
1. Wash chicken and pat dry with kitchen paper.
2. In a large bowl, add the flour and seasonings and mix well.
3. In a separate bowl, lightly beat the eggs.
4. Start by placing the chicken in to the egg, then in to the flour mixture. Cover all the chicken with the mixture. Then repeat, in to the egg then the flour so each piece of chicken has a double coating. Set aside on a plate and heat up your fry pan with enough oil to cover about 1 ½ inches deep.
5. When the oil is hot, VERY carefully place each chicken piece in the oil. Take care of any splashes of hot oil. When golden, turn the chicken over and do cook the other side.
Depending on the thickness of your chicken, it will take around 20 minutes, perhaps a little more if thicker joints are used. When you think it is ready, remove on to kitchen paper. Take a knife and just cut through one of the thighs to make sure the juices run clear.
(test if hot enough by dropping a tiny bit of crumb in the oil. If it sizzles and floats to the top, it's hot!)

*** Please note, you can also use this recipe to make oven baked chicken, just pop in the oven with a drizzle of olive oil on 350 F for 20 - 30 minutes or until golden brown and juices run clear.
