Apple Sauce and Walnut Brownie Cake. A lovely easy recipe and great tasting. It isn't particularly sweet due to the reduced sugar content, but you certainly get a good hit of chocolate. It's chewy and gooey, just like a brownie should be, but without the use of oil or fat and eggs, you can quite easily eat a slice or three with less guilt!

Ingredients

1 cup or 250 g Apple Sauce, sweetened or unsweetened.
1 tsp Vanilla Extract
½ Cup or 45 g Cocoa Powder
¾ Cup or 90g All-Purpose Flour
1 teaspoon Baking Powder
½ tsp Bicarbonate of Soda
⅓ Cup or 60 g  Sugar
¼ Cup or 90 g Dark Chocolate Chips
½ Cup or 70 g Walnuts, chopped
1 tsp powdered sugar for dusting

Instructions

1. Preheat oven to 350 F or 180 C and line a 20 cm baking pan with parchment paper.

2. In a bowl, sieve the flour, baking powder and bicarbonate of soda. Then in a separate bowl, add the remaining ingredients and mix until combined.

Fold in the flour to the wet mix. Do not over mix as this will cause the cake to become tough.

3. Add the batter to the baking pan and place in the oven for about 25 - 30 minutes or until the top is set and the middle has a slight wobble.

4. Remove from the oven and allow to cool in the baking pan for 10 minutes, then turn out on to a cooling rack.

    1. Hi Darla, Castor Sugar is just finer grained sugar from regular sugar often used in cake baking. If you can´t find it, you just need to beat the mixture a little longer so the sugar grains dissolve. Hope that helps!
