This was inspired by my lemon upside down cake on this site, and pairs well with our lovely homemade custard.
The cake itself is incredibly easy to make, and uses basic pantry ingredients. Making the cake is very easy, and it's just a case of weighing out all your ingredients and mixing them together and then baking!
The cake texture is very soft and fluffy, and because we've used a lot of pineapple, every bite you take of cake is bursting with juicy pineapple flavor.

For this recipe, we've used a fresh pineapple, but you can use canned or frozen. We used nearly all of the whole medium sized pineapple, leaving just a few chunks you see in the photos.

This is a great cake to make when you aren't in the mood or don't have time to bake and do a lot of fancy things. It's a very simple, easy recipe, and it comes out perfect every time.
You can also change the recipe by swapping the pineapple for other fruits, such as strawberries, blueberries, peaches, cherries or anything else you like. This is a basic recipe, well worth keeping so you can use it over and over for any cake you need.

Ingredients

- chopped pineapple - I used fresh pineapple, but you can use canned or frozen if you prefer.
- softened butter
- sugar - regular sugar or castor sugar will work
- eggs
- All-Purpose flour
- baking powder
- salt
- milk

Instructions
- Heat oven to 170 C, 325 F. Grease and line an 8 inch square baking pan.
Make the parchment paper slightly taller so you can lift the cake out easily when baked.

2. Make the cake batter by creaming the butter and sugar until light in color and fluffy.

3. Add the baking powder and salt to the flour.
4. Slowly add the beaten eggs to the butter mixture, adding a little flour as you add the eggs. Then gradually add the milk, stirring all the time.
5. Add the remaining flour and gently fold to incorporate everything.
6. Add the pineapples to the batter and mix until just incorporated.
Hint: Don’t overmix! If you overmix the batter, you are less likely to get a fluffy crumb.

7. Transfer the batter to your baking pan and place in the oven for about 50 minutes.

Test if it's ready by inserting a metal skewer into the center of the cake. If it comes out clean, the cake is ready!

Allow the cake to rest for 10 minutes before turning it out onto a cooling rack.
Tip
If you get hold of the sides of the parchment paper, you should be able to easily lift the cake out and place on the cooling rack.

- Decorate the top if you wish, with a simple sugar icing drizzle or leave as it is. We left as it is because the cake is absolutely moist and sweet enough!

- Slice and enjoy!
Serve with a dollop of ice cream, pouring custard or just eat on its own with a cup of tea.

- Upgrade - add a whipped cream frosting to the top and a sprinkle of shredded coconut
- Add an extra flavor dimension - add coconut milk instead of regular milk to the cake batter and ½ cup of shredded coconut to the cake batter.
- Make it boozy - Soak the chopped pineapple in spiced rum overnight to give it a Caribbean twist
Variations
- Round baking pans - The batter will be enough for two 8-inch round pans, which you can sandwich together with frosting in between and on top if you'd like to make a round birthday cake. The bake time will be around 35 minutes but check for doneness as usual.
- Loaf pans - The batter quantity will be enough for one 9-inch loaf pan. Bake time will be around 60 - 70 minutes.
- Sheet Pan - You will need to double the recipe quantities to make a 9x13 sheet pan cake. Bake time will be around 50 minutes.

Equipment
You don't need any special equipment to make this cake. A bowl and a wooden spoon will work, as will an electric mixer. So long as your butter is soft, at room temperature, you can easily make this cake by hand.
Storage
This cake freezes really well. We wrap in 2 layers of plastic wrap and simply defrost back to room temperature when needed. It will keep frozen for about 3 months.
Normal storage should be at room temperature in an air-tight container. This will keep moist for 3 - 4 days.
