I wanted to make a chocolate and cherry cake that would taste amazing, and one which would be quick to make, and not overly fancy and fussy.

With every bite, you get a taste of rich chocolate, combined with the flavor of whipped cream which balances the rich chocolate flavor, and juicy sweet and slightly tart cherries. This is a great flavor combination and very satisfying.

The fresh cream frosting in the middle adds to a wonderful creaminess and adds another texture to the soft, moist chocolate cake.

This chocolate cherry cake is an easy recipe, and you could, if you wanted to, make a nice fancy frosting by piping decorations all over, or just do as I have done by keeping it simple and easy and still, in my opinion, a stunning looking cake.

This cake is great for any occasion, whether you have some friends coming over, or you want to take a cake along to a gathering or party. It's always popular, and so easy to make.

We've used frozen, sweet pitted cherries. I always have a bag handy in the freezer. You can use canned, fresh, or frozen. Use whatever is convenient for you.

We've also made a cherry and coconut cake, also very tasty if you'd like to try that recipe too.

For this recipe, we've used our chocolate latte marble cake recipe and adjusted it so it's a simple chocolate cake recipe with a fuss-free whipped cream and cherry filling.

Ingredients

The Cake

1 cup or 250 g butter, softened
1 cup or 200 g Regular or Castor Sugar
1 ½ cups or 190 g AP flour
2 teaspoons baking powder
1 teaspoon salt
4 eggs, lightly beaten
2 teaspoons vanilla extract
¼ cup or 30 g cocoa powder plus extra for decoration
¼ cup or 60 ml milk
3 teaspoons Strong Coffee Granules
2 Tablespoons hot water

The frosting

1 ¾ cups or 400 ml of whipping or heavy cream

2 Tablespoons powdered sugar

1 cup sweet cherries, halved. (fresh or frozen)

NOTE: If using frozen cherries, allow them to defrost on a piece of kitchen paper.

Instructions

1. Preheat oven to 160 C, 325 F. Grease and lightly flour two 8-inch or 20 cm loose-bottomed round cake tins.

2. Sift flour, cocoa powder, salt, and baking powder. Dissolve the coffee granules with the 3 tablespoons of hot water in a cup.

3. Lightly beat eggs and add vanilla in a bowl.

In a mixing bowl, cream butter and sugar until light and fluffy.

4. Add egg mixture, a little at a time to the batter. Then add half the flour, then milk and coffee, then the rest of the flour.

5. Transfer batter to the 2 prepared baking pans.

6. Bake 30 - 35 mins or until a skewer comes out clean.

Allow the cakes to rest for 2 minutes then remove from pans and place UPSIDE DOWN on a cooling rack. Allow to COMPLETELY cool before frosting.

Please note, bake times will vary slightly so please check for doneness after 25 – 30 minutes of baking.

For the Whipped Cream Frosting

7. Add the powdered sugar to the whipping cream and whip until stiff.

8. Place one of the cakes onto a serving plate and spread the whipped cream over the top of the cake.

9. Arrange the halved cherries all over the whipped cream layer

then carefully place the second cake on top.

10. Serve as it is, or refrigerate until ready to serve.

OPTIONAL:

You can add more whipped cream on the top of the cake, or sieve some powdered sugar or grated chocolate on the top for decoration if you wish.
