Apple Crumb Pie! How could you not like Apple Pie! I think everyone must have tried it at some point, and to be able to make a good apple pie, with a nice crisp pastry is easy, so long as you follow the steps!

You will need

9 inch pie dish

Ingredients

Pie dough

Makes 2 disks: (you only need ONE for this recipe so halve the amount or save half the pastry in the freezer for another pie!)
2 ½ cup AP flour
Pinch of salt
1 tsp sugar
250g / 1 cup butter, cold and chopped
¼-1/2 cup ice water

The filling

¼ cup All Purpose flour
8-10 Granny Smith apples
¾ cup castor sugar
1 tsp cinnamon powder
2 tbsp butter
2 tbsp lemon juice

The Crumb Topping

1 cup AP flour
¼ brown sugar
½ Cup cold butter cut into cubes

Instructions

First make the pastry

1. Put flour, salt and sugar in food processor, add butter, pulse until mixture resembles coarse crumbs.

2. Slowly add ¼ cup ice water. Pulse till dough is crumbly but holds together when squeezed.
Do not overmix to have a flaky crust. You should see some pieces of butter still.

3. Divide dough into two portions, with dough still crumbly, wrap with 2 pieces of cling wrap to form 2 balls.
Wrap tight, refrigerate till firm. As you only need 1 portion for this recipe, freeze the other one!

To make the pie

1. Preheat oven to 230C / 450 F / Gas 8

2. Make the crumb by mixing everything by hand to resemble big crumbs and put in freezer.

3. Butter a 9 inch pie plate. Roll out 1 disk and put on pie plate, do not trim off the over hang, just fold over into the pie dish so you can refrigerate whilst you prepare the apples.

4. Peel, core and slice apples. To prevent browning add lemon juice. Add sugar, flour and cinnamon. Toss together.

5. Take pie plate out of fridge, unfold the overhang and put apples in and dot around apples with butter, then fold trimming over apples. Bake at 180C /350F/ Gas 4 for 45 mins, then sprinkle crumbs on top of apples and bake a further 30-45 mins. Leave pie to cool for 4-6 hours before cutting.
