Adelenne is a huge source of inspiration to our Lovefoodies Facebook group and always has a tasty recipe or two to share with us. Here, we have Adelenne's recipe for her Ultimate Chocolate Cake which she made for her little boy's birthday, and yes, he was very happy indeed!!!
Here, Adelenne has decorated her cake using Maltesers / whoppers and silver balls. Looks real pretty!

two 8 inch (22 cm) layer cake pans

Ingredients
The Cake
200 g or 7 oz or ¾ cup good quality dark chocolate
200 g or ¾ cup butter
1 tbsp instant coffee granules
85 g or ⅔ cup self-raising flour
85 g or ⅔ cup all-purpose flour
½ tsp bicarbonate of soda
100 g or ½ cup brown sugar
100 g or ½ cup caster sugar (fine sugar/bakers sugar)
25 g or 3 Tablespoons cocoa powder
3 eggs
200 ml or Just under 1 cup sour cream
Maltesers /whoppers, silver sugar balls to decorate
The Ganache
200 g or 7 oz or ¾ cup good quality dark chocolate
300 ml or 1 ¼ cup double / heavy cream
2 tbsp castor sugar (fine sugar)
Instructions
Make the cake
1. Grease and line 2 x 20 cm (8 inch) round cake tins.
2. Preheat oven to 180 C / 350 F
3. Break dark chocolate, butter, instant coffee and 125 ml / ½ cup cold water into a heavy based pan. Warm at low heat just until everything is melted. Don't overheat. Set aside.
4. Sift flours, cocoa powder in a big bowl. Add sugars and mix. In another bowl, beat eggs and add sour cream. Pour melted chocolate mixture and egg mixture into the flour mixture, stir till smooth.
5. Pour into prepared tins and bake for 35 mins or till the skewer comes out clean. Leave to cool in the tin then turn onto a wire rack.
Make the ganache
6. Chop the dark chocolate in a bowl. Pour double cream and sugar in a pan and heat till it's about to boil. Off heat and pour over chopped chocolate. Stir until the chocolate has melted and smooth. Cool mixture.
Assemble cake
7. Sandwich layers with a little ganache. Pour the rest over cake and smooth sides with a palette knife. Decorate with Maltesers / whoppers and silver sugar balls
