4 - 6 servings
Ingredients
2 tablespoons olive oil
1 large onion, chopped
2 garlic cloves, chopped
¾ pounds ground sausage
6 large sweet potatoes, peeled and diced
2 tablespoons chili powder
1 teaspoon cumin
32 oz jar mild salsa
2 cups vegetable stock
4 x 15 oz cans black beans (drain the liquid from 2 of them)
Instructions
1. Heat oil in a large Dutch oven over medium-high heat.
2. Add onion and cook until soft and translucent.
3. Add garlic and sausage and cook until sausage is no longer pink.
4. Add sweet potatoes, spices, salsa, and vegetable stock.
5. Bring to a boil and then reduce to simmer. Cook until sweet potatoes are tender, stirring occasionally.
6. Add the beans and remaining liquid. Cook until the beans are heated through.
Serve with some lovely bread fresh from the oven!
