Easy Pizza Omelette is so tasty! This recipe is really quick to prepare and incredibly easy too.

The ingredients are flexible, so feel free to choose whatever your family enjoys the most. You could make it meatless, or indeed add some chopped bacon, pepperoni slices, chorizo, or other meats you love.

As for the cheese in our easy pizza omelette, we chose cheddar cheese and mozzarella. Again, feel free to swap the cheese for what you enjoy the most.

The lovely thing about this recipe is that it really is fuss free and you will only have one pan to wash as everything gets cooked, and served (if you wish) in the same pan.

Here, we served our Easy Pizza Omelette with a side of Baby Baked Potatoes. Those are really simple to make and go really well.

Ingredients

6 eggs, lightly beaten
½ Cup Grated Cheese (I used Cheddar)
4 - 5 slices Mozzarella Cheese
¼ Red onion, chopped
5 - 6 Broccoli florets
6 Cherry tomatoes, halved
6 - 8 Slices of pepperoni, salami, chorizo or similar to your liking
6 mushrooms, sliced

Instructions

1. Heat a 8 - 9 inch oven proof skillet pan with a drop of oil, then add the chopped onions, sliced mushrooms and broccoli. Cook until the onions soften.

2. Add the slices of pepperoni or whatever you have chosen. Spread the meat out all over the pan.

3. Add the grated cheddar to the beaten eggs and season with salt and pepper, then carefully pour the egg mixture into the skillet.

4. Place the slices of Mozzarella on the top of the egg mixture.

5. Place the pan under a medium heat broiler / grill until the egg mixture has set.

6. Serve warm with a side salad and some of our lovely Baked Baby Potatoes.
