Nanny Pat has made some Breakfast muffins to share. They are very delicious indeed and topped with a wonderful easy mix of sugar, cinnamon and butter, these are great at any time, not just for breakfast.
Nanny Pat uses a basic muffin batter recipe and also her square muffin tins, to get these cute shapes!
Recipe by Pat Milton and uses a basic traditional muffin batter recipe... too old to find where it originated from!
Prep Time: 5 - 10 minutes
Cook Time: Approx 20 -25 minutes
Yield: 6 - 8
Ingredients
The muffins
⅓ Cup butter, melted,
½ Cup sugar
1 egg at room temp
1 ½ Cup all purpose flour
1 ½ tsp. Baking powder
½ tsp. salt
¼ tsp. nutmeg
½ Cup Milk
For the topping:
¼ Cup sugar
½ tsp. cinnamon
¼ Cup of melted butter
For the batter, you could also add some lemon or orange zest, some raisins or other dried fruit too. Also add some zest to the topping mix, very delicious!
Instructions
To make the muffins
1. Add the dry ingredients to a bowl. In a separate bowl, add the butter, milk and a lightly beaten egg. Combine but don't over mix.
2. Add the dry ingredients to the wet, combining. Again, don't over mix. You may have lumps but that is ok.
3. Pour the batter into greased muffin tins. I used my Brownie Bite pan and made 6 really big ones.
4. Bake for 15 minutes at 350 degrees, then put the broiler on to make them golden if you like, otherwise, bake for 20-25 minutes if using a regular muffin pan.
To make the topping:
1. Add dry ingredients to a bowl and combine.
2. Allow the muffins to rest from the oven for 5 minutes then remove from the pan, first dip the tops in the melted butter than into the sugar mix. Place on a cooling rack and enjoy warm or cold!

Would have loved to try this muffins but they are not in grams measurement, it's hard to know what is half cup or full cup for starters, scale is easy to follow. Cheers
