Blueberry Streusel Muffins!
These are cute little baked muffins, and Adelenne has also made a wonderful homemade blueberry sauce which is swirled into the muffin batter as well as whole blueberries, so in every bite, you get a burst of juicy sweet blueberries.
For the topping, we've made a simple streusel topping, which adds a different texture, and is crunchy against the soft and fluffy blueberry muffin.

This blueberry muffin recipe is so easy to make, and you can use fresh or frozen blueberries.

These muffins are also freezer friendly so you can make a batch and pop some in the freezer for another time!

Ingredients

Streusel topping

3 Tablespoons castor sugar (fine cake sugar)
3 Tablespoons brown sugar
⅓ cup AP flour
4 Tablespoons butter, melted

Blueberry Sauce

¾ cups blueberries
1 Tablespoon sugar
2 Tablespoons water

Muffins

1 cup blueberries
2 eggs
1 cup castor sugar
1 cup buttermilk (1 cup milk plus 1 tbs lemon juice)
2 ½ cups AP flour
2 ½ tsp baking powder
4 Tablespoons melted butter
2 teaspoons vanilla Extract
pinch of salt

Instructions

1. Make the streusel topping by mixing all the ingredients to a crumb mixture and then place in the fridge to chill whilst you make the rest of the recipe.

2. Make the blueberry sauce by adding all the sauce ingredients to a saucepan and cook for about 10 mins pressing down berries and sauce thickens. Set aside.

3. Preheat oven to 200 C / 400 F

4. Sift flour, salt and baking powder. Line muffin tray.

5. Put eggs and sugar in a mixer and beat for about 5 mins.

6. Add melted butter and mix, then add in buttermilk and vanilla.

7. Put all the flour mixture in all at once and the blueberries. Fold in with a spatula. Batter should be lumpy with a few dots of flour.

8. Spoon into the prepared tray so it is almost full.

9. Put ½ a tsp of blueberry sauce on top and use a toothpick or skewer to swirl it in the batter.

10. Scatter the streusel topping over the top of muffins and bake for 25-30 mins until the top is golden brown.

Transfer to a cooling rack and allow to completely cool before storing in an air tight container if not eating right away.
