Easy Blueberry Danish Pastries.  My goodness! This is an incredibly simple recipe and very quick to prepare... and of course, it is absolutely delicious!

For this easy blueberry Danish pastry recipe I have kept the ingredients very basic so you can all make this in a flash! For convenience, I've used a frozen pre-rolled package of puff pastry.

Of course, if you have time, you can make your own pastry. We have a super recipe here for flaky pastry which will make 2 of these blueberry Danish pastry recipes. I often have a few rolls of ready-made and ready-rolled puff pastry in my freezer. It's so convenient!

When I haven't got time to prepare a dessert or have friends coming over unexpectedly for a coffee, then I often make these pastries. You can keep a supply of blueberries in your freezer and cream cheese has a long fridge life so this recipe is very convenient to have!

I haven't made these blueberry Danish pastries overly sweet. In the instructions, I advise you taste the mixture for sweetness so you can add more if you have a particularly sweet tooth. I think they are fine as they are but you can adjust for your liking.

Now, the shop-bought Danish pastries tend to have a sticky glaze on the top of the pastries. If you wish to have that effect, simply heat up a tablespoon of apricot jam in the microwave and brush over the pastry AFTER it has come out of the oven.

That's all you do for the glaze! I was serving this with ice cream so I didn't want any more sweetness, but if you're planning on serving these for a breakfast or a coffee time snack, by all means, add the simple glaze.

Ingredients

1 Sheet ready rolled Puff Pastry
8 oz or 225 g Cream Cheese, Room Temperature
1 egg
1 Tablespoon Powdered Sugar
½ Cup or 75 g Blueberries
1 Tablespoon Regular Sugar for sprinkling

Instructions

1. Preheat oven to 425 F or 220 C. Unroll the sheet of puff pastry directly on to a baking tray. If you'd like to use our flaky pie pastry recipe to make your own, that would also be great!

2. Take a round-bladed knife and very lightly score a border around the pastry so there is about a 1-inch width. Make sure you don't score all the way through the pastry!

3. In a bowl, add the cream cheese and powdered sugar. Combine with a small whisk or fork. Taste for sweetness. I have not made the mixture overly sweet so feel free to add more sugar to your liking.

4. Add the beaten egg and thoroughly combine.

5. Spread the mixture over the pastry, keeping within the border.

6. Sprinkle the blueberries (fresh or frozen) all over the mixture and sprinkle the tablespoon of regular sugar all over.

7. Place in the oven for about 25 minutes or until the pastry has puffed up and is golden brown.

8. Remove from the oven and allow to cool for about 15 minutes. The filling will set firmer once it has had a little time to rest.

9. Slice into desired portions and serve as it is or with some whipped cream or ice cream.
