Rainbow Birthday Cake!
Adelenne loves baking and she often makes cakes, pies and all kinds of goodies. Here, Adelenne has kindly shared her lovely recipe to show us how she makes her Rainbow Birthday Cake and has given a step-by-step guide to how she builds the cake.
It sure is a show stopper and stunning.
Adelenne says this cake is huge, around 6 inches high and 8 ½ inches wide. It will certainly feed a party full of kiddies and all those colors are sure to grab their attention. Perfect for a birthday!

It does take a little time to build the cake, given the number of layers, and of course, if you have 6 cake pans, it will speed up the bake time as you will be able to bake all the cakes in one go.
Adelenne, like most of us, didn't have six 8 inch pans so she baked the cakes in two batches.
As far as serving the cake, Adelenne has shared a photo of how she cut the slices then halved them for the youngsters. So let's see how we can make this wonderful cake.

You will need
Six 8 inch round bake pans
Ingredients
The cakes
2 boxes of Betty Crocker Super Moist Vanilla or Yellow Cake mix (this will be enough to make 6 cakes)
6 eggs
2 cups of oil
2 cups of water
Wilton color Gels ( I find these give real vibrant colors, I tried with liquid ones but not so good)
The Frosting
2 cups of very chilled whipping cream
1-2 tbs of castor sugar ( depending on how sweet you like it. I just use 1 because I usually find cake mix has enough sugar in it)
¼ cup lemon curd (optional)
½ cup Rainbow Sprinkles
Instructions
As I have 3 cake tins, I made 3 layers at a time using one box of cake mix per 3 tins.
1. Spray or grease three 8 inch pans. Line the base as well.
2. One box of cake mix uses 3 eggs, 1 cup oil and 1 cup water. Pour contents of cake mix in a mixer and add the eggs. oil and water.
3. Beat on medium speed for 2 mins. Pour into 3 bowls and add a little of 3 different color gels , one in each bowl. Mix well and pour into prepared tins.
4. Bake in a preheated oven (180C or 350F) for 15-20 mins till a skewer comes out clean. Cool on wire rack and remove the paper.
5. Repeat process using the 2nd box of cake mix and the other 3 colors.
The frosting
6. While waiting for the cake to cool, prepare the whip cream frosting.
Beat whip cream on low and slowly add the sugar. When soft peaks form, add the lemon curd. Beat till stiff peaks.
Assembly
7. To assemble the cake, set the layers accordingly. Red, orange, yellow, green, blue and purple. I start with red and end with purple on top. You can start the other way as well.
8. Place the first cake on a board or plate, add a dollop of frosting, smooth out to the side and layer the second, another dollop of frosting, and continue till all 6 layers are done.
9. Thinly coat the whole cake on the side and top with a thin layer of frosting first and chill the whole cake for 15-20 mins.
10. Apply a final thick coat of frosting on the top and sides and decorate with "rainbow sprinkles".
11. Chill the cake till ready to serve. The whole cake is about 15cm (6 inches) high and 22cm (8.5 inches) in diameter. Pretty tall… you can also use 11 inch pans to make the cakes so its wider and not too tall.
