Easy Lemon Dumplings This is delicious! Quick and easy and great served warm with a blob of ice cream or whipped cream
Easy Lemon Dumplings. I love this recipe! It requires no skill at all, it's budget friendly, quick to make and absolutely delicious! Serve warm with a drizzle of lemon sauce and a blob of ice cream or whipped cream. This is a very filling winter warmer, so don't be deceived by those little dumplings. Judge around 2 or 3 per person and that will be pleasing to most appetites!
Prep Time: 5 minutes
Cook Time: 10 minutes
Yield: 6 - 8 dumplings
Ingredients:
For the Dumplings:
1 Cup or 125 g All Purpose / Plain Flour
1 tsp baking powder
3 Tablespoons (40 g) butter, cold and cubed
½ cup or 120 ml milk
For the Lemon Syrup:
1 cup or 240 ml boiling water
½ cup or 100 g Regular sugar
1 Tablespoon golden or maple syrup
Juice and zest of 1 lemon
Instructions:
1. Using a saucepan approx 6 - 7 inches in diameter, add all the lemon syrup ingredients and bring to a gentle boil, giving it a stir. Once it starts to boil, reduce the heat to a gentle simmer, and make the dumplings.
2. In a bowl, add the flour, baking powder and butter. Using your fingers, rub the ingredients until fine breadcrumbs are formed. Then make a well in the middle and add the milk. Use a knife and cut the milk into dry ingredients, until a dough is formed. Divide in to 6 - 8 dumplings and form into balls, about the size of golf balls or a little smaller.
3. Gently place the dumplings into the lemon syrup and allow to simmer for about 10 minutes. Spoon the syrup over the dumplings, and halfway through cooking, carefully turn the dumplings over using a spoon so they are all cooked evenly and nicely coated with the syrup.
The dumplings will double in size and go fluffy, like the photo below.
4. Serve warm with a drizzle of the syrup and ice cream or whipped cream.

I doubled the sauce to make the dumplings easier to cook and think it needs the syrup in the dumplings when making them to give the dumplings more flavour

Great recipe. I used 1/2C of lemon juice and melted butter in warmed milk. Will definitely be making it again.
