Easy Blueberry CakeH

Adelenne has made a wonderful Blueberry Cake, and it is so delicious and moist she just had to come and share it on Lovefoodies for you all to enjoy!

Adelenne says when you are mixing the batter, it may seem like it is going to be dry, but she says to trust her and keep to the recipe..it really does turn out moist'

The recipe is very simple and straightforward, and when this is baked, the cake is soft and fluffy and bursting with blueberries.

Ingredients you will need

  • Self Raising or cake flour
  • ground almonds
  • butter, room temperature
  • eggs
  • castor (fine bakers) sugar *** If you don't have castor sugar, use regular sugar, the grains are larger but it will be ok.
  • vanilla
  • fresh or frozen blueberries
  • almond flakes

Instructions

1. Heat oven to 350 F / 180 / Gas 4. Line and grease an 8 inch / 20 cm round tin.

2. Put flour, ground almonds, butter, eggs, and vanilla into a food processor and blitz until combined.

3. Spread half the mixture in the cake tin. Scatter blueberries on top.

4. Dollop the remaining cake mixture on top and try to smooth it out.

5. Scatter almond flakes and bake for 50 mins or until golden brown. Cool and remove from tin.

  • 1 cup fresh or frozen blueberries
  • 2 tbs almond flakes
