Easy Toffee Pie, deliciousness in every bite!

This delicious recipe has been generously shared by one of our great cooks, Carina. She's always coming up with great recipes, and here we have Carina's Toffee Pie, the pie crust pastry recipe being passed down to her from her Grandma, and now Carina would like to share her recipe (and her grandma's) with you all!.
Carina tells me this is her youngest son's favourite, so I imagine this tasty pie doesn't last long once it's ready for eating!

Yield: 6 - 8 persons

Ingredients

1 ½ cups or 190 g plus 1 tbsp flour
¾ cups or 95 g corn starch
3 tbsp sugar
⅔ cups or 150 g butter at room temperature
2 egg yolks
1 tsp vanilla
5 tbsp milk
13 fl oz or 500 gr dulce de leche (real Argentinean one is the best) at room temperature **see below
9 oz or 250 grs Melted chocolate ( for me the best one is the dark one but you can use milk chocolate if you wish)

Here's our recipe to make your own Dulce De Leche

Instructions

1. Preheat oven 350F or 180C or Gas 4

2. In a bowl mix flour with cornstarch.

3. In another bowl mix sugar and butter until creamy add egg yolks , milk and vanilla. ( I use my stand mixer for this).

4. Incorporate the flour/cornstarch mix and blend until smooth.

5. Press onto a pie plate and cook until golden brown,....Grandma never had neither oven temperature nor cooking time so I do 350F, 180 C, Gas 4 .
I believe it takes me about 15 to 20 minutes but check it.

6. Let pie crust cool down and fill with the dulce de leche,...then just melt the chocolate and spread on the dulce de leche.

7. Bring to the fridge for a couple of hours,..and then enjoy.
