Strawberry Crescent Roll Cheesecake Bars. This tastes amazing! It's our twist on the famous Mexican Sopapilla dessert.

The addition of the strawberries adds a lovely fruity taste in contrast to the sweet and creamy cream cheese filling. Bursting with juicy strawberries in every bite, this is a really delicious dessert, served warm of cold, and of course perfect with a cup of tea any time!

The recipe itself is very easy and most of not all of the ingredients you will be able to buy in advance and keep in your freezer should you wish to plan ahead with your grocery shopping.

The pastry is very easy to get, I usually buy the ready rolled puff pastry and simply cut it to fit the size of the pan.

As for the strawberries, if you can use fresh, that's great. However, frozen strawberries work really well with this recipe, as do other frozen berries, so feel free to swap the fruit to whatever you have handy in your freezer.

Ingredients

Strawberry Crescent Roll Cheesecake Bars, showing ingredients

1 can of Pillsbury Crescent rolls or 1 sheet of ready rolled puff pastry
8 oz cream cheese, room temperature
3 - 4 Tablespoons powdered sugar
1 tsp vanilla extract
1 cup frozen or fresh strawberries, sliced
1 Tablespoon Regular Sugar
1 Tablespoon butter, melted
Sugar for sprinkling

Instructions

1. Pre heat oven to 350 F or 180 C.
Unroll and spread the crescent rolls or puff pastry sheets flat then cut in half. Then with one half of the pastry, line the bottom of a greased 8 x 8 baking pan. I also line the pan with foil first so it is easier to lift out after baking.

2. In a mixing bowl, add the powdered sugar, vanilla and cream cheese. Mix well with a spoon or whisk. At this point, it is a good idea to taste a strawberry for sweetness.

If your strawberries are not very sweet, you may wish to add a little more sugar to the cream cheese mixture.

3. Spread the mixture evenly over the crescent roll / puff pastry layer. Then add the sliced strawberries all over.

Top Tips

If using FROZEN strawberries, make sure you use some kitchen paper and pat out as much moisture as possible.

You can add the strawberries frozen or defrosted. It's up to you! (For this recipe I used frozen strawberries which were semi defrosted).

4. Carefully place the other layer of pastry on top of the cream cheese mixture, then using a brush, spread the melted butter on the pastry and then a sprinkling of regular sugar.

5. Bake for 25 - 30 minutes until golden brown. Allow to cool for 20 - 25 minutes before trying to slice, so it can firm up a little.

Serve as it is or with a nice blob of whipped cream!

If you leave this to chill over night, the filling will firm up just like cream cheese when it is refrigerated.

You can serve these whilst they are still gooey and slightly warm, or indeed chilled. Try both and see which way you like the most! I liked them whilst the filling was still soft.
