For the base I've used chocolate chip cookies, then I've added a nice smooth layer of melted chocolate. Then on top of that, the creamy filling is full of banana, Maltesers / whoppers, and of course peanut butter!

When you take a bite, you get the crunch from the cookie base, with a wonderful chocolate taste, then the filling gives you a nice contrast of banana chunks, plus the crunchy honeycomb from the Maltesers / whoppers.

an 8-inch springform

Ingredients

The Base

2 1/2 oz or 75 g Melted Butter
8 oz or 220 g Chocolate chip cookies, crushed.
3 1/2 oz or 100 g melted chocolate

The Filling

3 Tablespoons Peanut Butter
2 - 3 Tablespoons Powdered Sugar
A handful of Maltesers / Whoppers roughly cut in half
2 bananas (1 mashed, 1 sliced)
8oz or 250 g Cream Cheese
7 fl oz or 200 ml Whipping Cream plus 1 Tablespoon Powdered sugar.

Instructions

Make The Base

In a bowl over hot water, gently melt the chocolate.

Whilst waiting for the chocolate to melt, crush the cookies and add them to your mixing bowl of melted butter. Combine well.

Cheesecake Base

2. Grease and line (optional to line) your springform pan.

I chose to line my pan simply because it is easier to remove later.

Place the cookies in the bottom of the pan. Pack them in hard and firm. I use the bottom of a glass and push them down hard. If they are not firm, the base will fall apart when you serve!

3. Pour the melted chocolate all over the cookie base and place in the fridge or freezer to set whilst you make the filling.

Make The Filling

1. In a mixing bowl, place the Peanut Butter, 2 -3 Tablespoons powdered sugar (depending on your sweet taste! Try it and see if you need to add more sugar), 1 mashed banana, and the cream cheese. Whip up until all combined and a little fluffy.

Add the banana slices and broken Maltesers / Whoppers. Fold in gently so as not to break them.

2. In a separate bowl, whip up the fresh cream and powdered sugar. Then add the whipped cream to the peanut butter mixture, and very gently fold in until all incorporated.

3. Add the mixture to the pan and smooth over.

Place in the fridge for 4 hours to firm up then decorate the top how you like!

I used old homemade peanut butter cookies for the base (was the reason I searched this recipe before the cookies went off) and I added some caramelly stuff to the mix instead of more peanut butter. I also just grated some chocolate on the top as I didn’t have all the chocky ball things. Verdict – YUM
