Missy is always cooking up something tasty, and here we have her real easy Spicy Beans recipe.
Missy made this recipe up herself and served it with some beef tacos, and her Bacon and jalapeno cornbread. You can serve it with anything you like! Whatever you decide, it will always be tasty!

Recipe by Missy Palmer Hawkins
Prep Time: 5 minutes
Cook Time: High for 3 hours, Low for 5 in a crockpot
Yield: 4 - 6 Persons
Ingredients
1 ½ small bags pintos beans
ham, as much as you like.
1 packet of ranch seasoning
1 onion chopped
2 cans of rotel tomatoes.
fresh jalapeños
Kenny's everything Cajun seasoning.
**** For the seasoning and jalapenos, add as much as you like according to your taste.
***** Rotel Tomatoes are canned diced tomatoes mixed with diced green chillies and onion. You can make it yourself if you can't find them where you live.
Instructions:
Place everything in the crock pot and cover with water and cooked on high for 3 hours and low for 5 hours
They are delish!
Missy's Spicy Beef and Bean Nachos is a perfect accompaniment to this dish

says:I had to google “rotel”..being Canadian, I had never heard of this before…but sure going to look for them the next time we cross the border into Sault Ste Marie, Michigan. This sounds delicious…but, all the recipes do…I’m going to hold off trying it til I get some Rotel and Kenny’s Everything Cajun

says:Hi Joan. Rotel is not absolutely necessary! If you don’t have it, use a can of diced green chiles and a can of diced tomatoes! It will come out just as good. Also ANY Cajun seasoning is fine.

says:Nancy I never soak beans and they ALWAYS come out tender and perfect! You can soak them if you prefer. It does save a step not to.
