Calling all Harry Potter fans! This recipe for butterbeer blondies is super easy and perfect for a party! They're popular with the kiddies as well as the grown ups, and always go fast so be sure to make plenty.
For those who aren't familiar with 'butterbeer', its a drink featured in the Harry Potter books and films, made up of a simple caramel extract, brown sugar and butter syrup which then gets topped with cream soda and a dollop of cream.
Here, we've made a sweet treat based on a few of those ingredients. Be warned, these bars are very sweet, so feel free to leave off the frosting or reduce the brown sugar amount by a third if you prefer less sweet.

The recipe itself is very easy and straight forward. This makes 9 bars, but you can of course cut them smaller if you prefer. I quite like serving these warmed with a dollop of vanilla ice cream as a dessert if not eating as a snack. Ingredients
½ cup or 115g unsalted butter, melted
¾ cup or 150g light brown sugar, packed
1 large egg
1 tsp vanilla extract
½ tsp butter extract
½ teaspoon of rum extract
1 cup or 125g all-purpose flour
½ tsp baking powder
¼ tsp salt
½ cup or 155g butterscotch chips
Frosting ( Optional)
¼ cup or 55g unsalted butter, softened
1 & ½ cups or 180g powdered sugar
1 tbsp milk
½ tsp vanilla extract
½ tsp butter extract
½ teaspoon rum extract
Sprinkles (optional)
These butterbeer bars are very sweet so feel free to reduce the sugar amount by ⅓ or omit the frosting if you prefer a less sweet bar.
Instructions
- Preheat the Oven: Preheat your oven to 350F or 180C. Grease or line an 8x8-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal. *If you don't have any parchment to hand, use our homemade pan release recipe.
- In a medium bowl, combine the melted butter and brown sugar. Mix until smooth.
- Add the egg, vanilla extract, and butter extract (if using). Mix until fully combined.
4. Stir in the flour, baking powder, and salt until a soft dough forms.
5. Fold in the butterscotch chips until evenly distributed throughout the dough.
6. Spread the dough evenly into the prepared baking pan.
7. Bake for 18-22 minutes until the edges are set, and a toothpick inserted into the center comes out clean or with just a few crumbs.
8. Allow the bars to cool completely in the pan on a wire rack.
9. Once the cookie bars are completely cooled cut into squares or bars and serve or add the frosting (instructions below).
Frosting Instructions
- In a medium bowl, beat the softened butter until creamy.
- Add the melted butterscotch chips and beat until smooth and well combined.
- Gradually add the powdered sugar, ½ cup at a time, beating on low speed until combined. Increase the speed to medium and beat until the frosting is smooth and fluffy.
- Add the vanilla extract and 1-2 tablespoons of milk to reach your desired consistency. If the frosting is too thick, add more milk, one teaspoon at a time.
