This delicious recipe has been generously shared by one of our great cooks, Carina. She's always coming up with great recipes, and here we have Carina's BBQ Chicken Breast.
Carina tells me it's one of her hubby's favourites, so much so, she has to keep him out of the kitchen until she is ready to serve dinner!!
The smells when this is cooking is wonderful, and the tender succulent chicken with the rub is just so delicious!.
It's an easy recipe, and here, Carina has served her chicken with caramelised onions and lentils.

Yield: Allow 1 chicken breast per person.
Ingredients
Rub for the chicken breast:
3 Tbsp paprika
3 Tbsp salt
4 tsp granulated onion powder
2 tsp granulated garlic powder
2 tsp freshly ground white pepper
1 ½ tsp freshly ground black pepper
¼ tsp dried thyme
¼ tsp dried oregano
Instructions
1. Mix all ingredients for the rub and store in a cool, dark place. Use within three months.
2. Place the chicken in a bag with some of the rub and refrigerate for a few hours. I made this up before I went to work and left to marinade in the fridge.
3. BBQ at 350 F / 180C / Gas 4 for about 40 minutes, depending on the size of the breast could be less or more.
They were juicy and soooo good. Spicy,...but we like spicy!
