Thou Shell Eat Beans!
Libby has kindly shared another of her family recipes for us all to enjoy. This recipe was originally taken from a cookbook many years ago, Looneyspoons, Low Fat Food Made Easy.
Over the years, Libby has adapted the recipe to suit whatever she happens to have available, and Libby says this:

"Today, I used red and yellow bell peppers, and a can of navy beans and a can of kidney beans. You just use whatever you have on hand. I also used a four cheese Mexican blend of shredded cheese I have for the topping.
I have made this many times and it is a recipe that you can use whatever you have on hand. I usually use left over brown beans and whatever pasta I have, and a jar of tomatoes I can instead of the tomato sauce if I don't have the tomato sauce. It's a very forgiving recipe and yummy!"

Ingredients
This is the original recipe, and of course, as you read in the introduction, Libby has changed a few ingredients to suit.
1 cup diced green bell pepper
½ cup chopped onions
2 cloves garlic, minced
1 teaspoon dried oregano
½ teaspoon ground cumin
½ teaspoon crushed red pepper flakes
2 cups tomato sauce
2 cups canned black beans drained and rinsed
8 ounces uncooked medium sized shell shaped pasta,(about 3 cups dry)
½ cup shredded Monterey Jack cheese.
Instructions
1. Spray a large saucepan with non-stick spray. Add first 6 ingredients and cook over medium heat for 5 minutes, until vegetables are softened. Then add tomato sauce and black beans. Bring to a boil. Reduce heat to medium-low. Cover and simmer for 5 minutes.
2. Meanwhile, prepare pasta shells according to package directions. Drain. Add shells to sauce and mix well. Ladle into individual serving bowls and sprinkle with cheese.
