Minestra di Fagioli, Cannellini Bean Soup . A great tasting soup using wonderful ingredients
This delicious recipe has been generously shared by one of our great cooks, Simone.
Simone has harvested some bushels of Cannellini beans and decided to make a wonderful soup, full of great flavours and very pleasing indeed!
Together with this recipe, Simone tells me she serves this dish with her homemade bread rolls, and yes, Simone has also kindly shared that recipe with us too!
So without further ado, let's meet Simone and her delicious recipe!

Yield: 6 - 8 Persons
Ingredients
4 cups chicken stock
1 onion chopped
2 carrots chopped
1 celery stock chopped
Sprig of fresh parsley
2 garlic cloves
2 cups fresh Cannellini beans.
Instructions
Place all the ingredients in a pot and bring to a boil and simmer until all the ingredients are soft, about 1 hour. Salt and pepper to taste, serve with some of my soft bread rolls and enjoy!
