2 Slices Soft White Bread
2 Eggs, hard boiled
1 Tablespoon Mayonnaise
1 Tablespoon Salad Cream
½ tub of Garden / Salad Cress (about 2 tablespoons)
1 Tablespoon Butter, softened
Salt and Pepper

If you can’t get Salad Cream, add a squeeze of lemon juice to the mayonnaise.

Instructions

Remove the crusts from the bread

Butter each slice of bread

Mash the hard-boiled eggs in a bowl. Add the mayonnaise and salad cream,

Spread the egg mixture evenly over the buttered bread slice

Place the other slice of bread on top

Slice into 3 even pieces so you have finger-shaped sandwiches.

Egg and cress sandwiches are best made just up to 3 hours ahead of time, keep them covered in plastic wrap and refrigerated.

What bread should I use for Tea Party Sandwiches?

Traditionally, the bread used is a soft, white bread with the crusts removed. You can use any bread, wholemeal, sourdough, seeded etc, just make sure the bread slices are thin and not thick cut so you still have the dainty size for finger food.
