This has got to be the world's BEST EVER lemon cake! If you're looking for a lovely soft, fluffy and moist cake bursting with the tanginess from lemons, this one is for you!

I had the privilege of spending the afternoon with a friend who happens to be a great baker. Sam loves to bake for her family, and one of her most popular cakes is this Sticky Lemon Cake.

It's packed with flavor and the texture is as soft and fluffy as can be.

This cake is kind of similar to a lemon drizzle cake, only it's way off the charts in terms of flavor and texture. With every bite you get a mouthful of soft fluffy cake, the crumb is finely textured, light, and airy.

The method of making this cake is super easy. No need to sieve flour or use any fancy cake method.

The trick to getting a soft, light batter is to make sure your butter is at room temperature, so it is soft, and cream the butter and sugar together so it is fluffy and goes a pale color.

Once that is done, you know your cake will have a nice fluffy texture.

You'll most likely have the ingredients to hand for this cake.

For the topping, we've used lemon curd, which you can buy in the supermarket by the jams. You can also make your own lemon curd using our easy recipe if you'd prefer.

Now I know from other lemon recipes we have, some of you prefer a sharper lemon flavor, and some not so sharp. This cake has the perfect balance of sharp to sweet. However, please taste the topping as you are making it so you can add a squeeze more lemon juice if you want sharper.

This cake is perfect for an afternoon tea party, or to take to friends for sharing. It will keep in an airtight cake box for a few days if you wanted to make it ahead.

We've served this cake with a blob of lemon whipped cream which is absolutely delicious and so easy to make.

Ingredients

The Cake

1 cup or 225g Regular Sugar
8 oz or 225g Butter, room temperature
4 Eggs
1 ¾ Cups or 225 g All-Purpose or Plain Flour
2 Tsp Baking Powder
Zest and juice of 1 lemon

The Topping

2 Tablespoons Lemon Curd
Juice of 1 Lemon

Instructions

1. Preheat oven to 350 F or 180 C. Grease and line a 9 inch round baking pan

2. Add the butter and sugar to a mixer and cream until light and fluffy.

3. Grate the zest the lemon and juice of a lemon and add to the batter mixture. 

4. Add the eggs and flour to the batter and mix until combined.

5. Transfer the cake batter to the greased baking pan and bake for 30 - 40 minutes.

6. Test the center of the cake for doneness.

Make the Topping

7. In a saucepan, add the lemon curd and lemon juice and over a gentle heat

Stir until simmering and the mixture is smooth.

8. When the cake is done, leave it in the baking pan and take a skewer and poke holes all over the surface.

9. Pour the lemon topping all over the surface

and take the back of a spoon and spread evenly.

10. All the cake to completely cool before removing from the pan and place on a serving plate.
