The Chicken Coating
1CupAll Purpose Flour
1tspchipotle chilli powder
2eggsbeaten (you may need more)
Wash chicken and pat dry with kitchen paper.
In a large bowl, add the flour and seasonings and mix well. In a separate bowl, lightly beat the eggs.
Start by placing the chicken in to the egg, then in to the flour mixture. Cover all the chicken with the mixture. Then repeat, in to the egg then the flour so each piece of chicken has a double coating. Set aside on a plate and heat up your fry pan with enough oil to cover about 1 1/2 inches deep.
When the oil is hot, VERY carefully place each chicken piece in the oil. Take care of any splashes of hot oil. When golden, turn the chicken over and do cook the other side.
