4TablespoonsCornmeal
4TablespoonsAll Purpose Flour
3 - 4TablespoonsCold Water
5TablespoonsCreamed Corn ** If using canned cream corn it may be a thin consistency so do not add any water to the batter.Very Thick consistency
½TablespoonVegetable Oil.
Pinch of Salt
1TeaspoonBaking Powder

Instructions
Add all the ingredients except the pineapple rings to a bowl and whisk. Add the cold water last, and add 1 Tablespoon at a time and whisk until you get a thick consistency, so the batter stays on the back of a spoon. You may not need all the water.
*** You can make fritters without the pineapple, like in my photo above.
Heat a non stick frying pan with a couple of tablespoons of vegetable oil. Submerge the pineapple rings into the batter and then gently place in the pan. Leave the rings in the pan for a minute or two until brown, and then turn them over to brown the other side. Place on kitchen paper to remove excess oil. Do this for all the pineapple rings.
