Delicious Hummingbird Cake

Delicious Hummingbird Cake is so moist and full of goodies!
It's VERY easy to make and the results are very pleasing. For the decoration, Adelenne also made some pineapple slices in her dehydrator. It makes for a lovely decoration and something a little different for your friends and family to enjoy.
This is a soft, moist cake and always popular at parties and family gatherings. So please enjoy and happy baking!

Ingredients:

3 cups All Purpose flour
1 tsp baking powder
1 tsp baking soda
1 tsp salt
2 tsp cinnamon powder
¼ tsp clove powder
¼ tsp nutmeg powder
3 large eggs
2 tsp vanilla extract
1 ½ cups sugar
1 ½ cups crush pineapple ( with juices)
3 very ripe bananas ( mashed with a fork)
1 ⅓ cup canola oil
2 cups chopped pecans, toasted

Instructions: 

1. Preheat oven to 350 F or 170 C. Grease and line 2, 9 inch pans.
2. Sieve flour, baking powder, baking soda, salt, cinnamon, clove and nutmeg. Set aside.
3. In a mixer, beat eggs, vanilla and sugar until pale and fluffy.
4. Drizzle oil in slowly and beat for 1 minute. Add flour mixture in batches on low, don't over mix.
5. Stir in bananas, pineapple and pecans with spatula. Divide batter into the 2 pans and bake for 30-35 mins or until skewer comes out clean.
6. Let cool for 10 mins before removing from pan to cool in wire rack.
7. Frost with your favorite frosting and decorate with dried pineapples and more toasted pecans.

Dehydrated PineappleNOTE: If you would like to make some dehydrated pineapple rings for the decoration, you just need to place the pineapple slices in the dehydrator for 24 hours
