I love Cider! When you make this dinner using apples and an apple cider, the flavours are wonderful!
Here I served the pork chops with some Home Made Garlic and Basil Spaetzle and simple steamed vegetables and served with the Apple Cider sauce in a jug at the table so everyone could help themselves.
It went down a storm!

*** You can also cook this in a slow cooker on LOW for 4 hours, after the Browning stage. (step 5)
4pork loin chops
1teaspoonchopped fresh parsley or your favourite herb. Thyme also works nice.
1red applecored and cut into rings (allow 1 ring per chop. Any left just cut into cubes.)
salt and pepper to taste
1cupdry cider250 ml
Preheat oven to 190 C / 375 F
In a large heavy fry pan, over medium-high heat, add the olive oil, garlic and mustard. Fry the pork chops on both sides until a nice golden colour. Transfer the chops to a baking dish with a lid, and sprinkle with thyme or parsley.
Keeping the juices in the pan, fry the apple rings in the pan for a few seconds on each side to give them colour, then add them dish. (notice I did this at the same time as the chops as I had space in the pan. Any cubed apple pieces, do likewise and add to the oven dish too.
Add to the pan the apple cider. Stir to deglaze the fry pan - getting any nice bits from the bottom. Bring the mixture to a simmer, then pour over the pork chops and apples in the dish. Season with salt and pepper.
Bake in the preheated oven, covered for 30 to 40 minutes, or until the pork chops are cooked through.
Remove the pork chops and apples to a serving dish and stir the cream into the juices. Serve sauce over pork chops. *** If you are not using cream, make up a tablespoon of cornstarch with a drop of water and add to the sauce to thicken if necessary.
