Add the cream and sugar to a saucepan and bring to a gentle boil then remove from heat. Give it a stir to make sure all the sugar has dissolved.
Add the prepared strawberries and lemon juice to a food processor and puree until smooth. Then add the cream to the pureed melon and blend until everything is fully combined.
Pour the mixture in to the ice cream machine and churn until thick or semi frozen. At this point, have a taste and see if you need to add some honey for extra sweetness.This should be about 30 minutes. Then transfer to your freezer proof container and freeze until it is hard to your liking. Serve with your favourite berries or in an ice cream cone!
NOTE: If you do not have an ice cream machine, you can place the mixture (in it's mixing bowl) in the freezer and after 2 hours, use an electric whisk and mix it. Return to the freezer for another 2 hours, then repeat once more with the electric mix, before finally returning to the freezer until completely set.
