Slicesof your favourite bacon. Can be smoked if you like.
Some scallions / Spring onions
Cut your chicken breasts down the middle, but not all the way through, and then place in a bowl with the above dry ingredients. Combine everything well and rub into the meat.
Lay the chicken flat, and inside, lay a slice or two of bacon, you may need to cut the bacon rasher in to two so it fits nicely. Lay a couple of slices of green peppers and some scallions, then roll the chicken breast up and tie with some kitchen string as in the photo.
Brush with BBQ sauce, on the BBQ about 30 - 40 minutes at 350 F / 180 C / Gas 4
or in the oven at the same temperature. Allow to rest for 10 - 15 minutes, then remove the string and slice up for serving and ENJOY!
