In large pot of boiling water, to which a little salt and about ¼ cup Extra Virgin Olive oil has been added, boil the pasta for 8 minutes until al dente.
Immediately, in the sink, pour pasta into a colander and rinse with cold water until cool. Shake colander and continue to let drain for about 15 minutes.
In a large bowl, combine all ingredients.
Cover bowl and chill for several hours.
Just before serving sprinkle some Parmesan cheese on top, and enjoy!
