1 1/3cups/ 160 g graham crackers crumbsor Digestive biscuits for non US
1/3cup/ 65 g brown sugar
1/3cups/ 75 g melted butter
12oz/ 340 g cream cheese room temperature
1/2cup/ 100 g white sugar
3TablespoonsDulce De Leche
Preheat oven 350F or 180C or Gas 4
Make the base
Combine the crumbs, sugar and cinnamon. Stir the melted butter. Press evenly into a 9 inches pie plate
Make the filling
Beat the cheese with the sugar until well mixed. Add eggs one at the time and keep beating. Add the vanilla. Beat until smooth and pour into the prepared crust. Put drops of f Dulce De Leche on the cheesecake then take a knife or chopstick and swirl the drops into a pattern.
Bake for 30 to 35 minutes
**Please note, this is quite a sweet dessert so you may wish to reduce the sugar quantity by around 1/3 less.
