castor sugar *** Use regular sugar if you can't find castor. It just takes a little longer for the granules to dissolve.

veg oil

almond extract
Whole almonds

beaten egg yolk for glazing
Instructions
Put everything except the egg yolk and almonds in a large bowl and mix till it forms a dough.
Use 1 Teaspoon measure of dough and roll into balls.
Place on a parchment lined baking tray and press an almond on top of each ball.
Glaze each cookie with yolk.
Bake for 20 - 25 mins at 350 F

The bottom of the cookie has to be golden brown or darker than the sides or it will not hold.
