This is a very nice and easy recipe, and perfect for a weekend breakfast or brunch, or even a supper!
I have made this recipe using less fat and no sugar, made poached eggs, a little melted cheese and a sprinkling of herbs on top of the waffles. You can alo add some ham or bacon. You decide!
Servings: 6Waffles
Ingredients
For the Waffles:
1cupsand ¾ or 220 g All Purpose Flour
2teaspoonsbaking powder
1teaspoonsalt
2eggsseparated
1cupor 235 ml Buttermilk
1cupor 235 ml milk
Optional extras for the waffles
6Tablespoonsmelted butter
5tablespoonssugarif making sweet waffles
For the topping:
Eggs - as many as you like
Slicesof cheese. I used Leerdammer
Salt & pepper
A dash of cayenne pepper and or a sprinkle of your favourite herbs
Instructions
Make the waffles by adding all the ingredients to a bowl except the egg whites.
Lightly whisk the egg whites in a separate bowl until fluffy. You can do this by hand, it doesn't take long at all.
Fold in the egg whites to the waffle batter until combined.
Notes:
If batter is to thin, add a tablespoon of flour, and if batter is too thick, add a tablespoon of extra milk. adjusting the batter until it has the consistency of very heavy cream
Cook the waffles using your waffle machine and keep warm in a low oven whilst you poach the eggs.
To poach the eggs, cook them to your liking. Some like runny, some like well done! If you would like to see how to make perfect poach eggs, you can see here.
When your eggs are ready, take the waffles from the oven and arrange on plates. then add the poached eggs, slice of cheese and salt, pepper etc and serve warm.
Note: If your cheese does not melt, pop it under the broiler / grill for a few seconds.
