  • 1 lb or 500 g cheap cut lamb or beef such as Braising or chuck steak
  • 1 onion sliced
  • 5 cloves garlic chopped
  • 2 in large carrots peeled and sliced into chunks. I also added Brussels Sprouts mine
  • swede/ rutabagas / turnip/ other root vegetables Whole baby onions if you like them!
  • handful of mushrooms whole or cut smaller
  • 2 tablespoons olive oil
  • 1 1/2 Tablespoons flour you may need cornstarch & a drop of water at the end to thicken to your liking
  • 2 Leaves Bay
  • 3 Tablespoon balsamic Vinegar PLUS 3 Tablespoons of White wine optional
  • 1 in stock cube / beef broth / boullion dissolved 2 1/2 cups / 500 ml boiling water
  • 1 teaspoon thyme / parsley - you choose your favourite.
  • Salt & Pepper to season
  • Fresh parsley for garnish optional
  1. Set your oven to 170 C , Gas 3, 325 F (you can also cook on your stove top)
  2. First of all, cut your beef into palm sized portions then place in a zip bag and bash using a meat hammer on BOTH sides so they are about 1/2 inch thick. Do this for all your slices then place in a dish.
  3. To the meat, add the balsamic vinegar, white wine if using, olive oil, crushed garlic and pepper. Do not add the salt. Mix it all together then arrange the meat so it is sitting flat. Leave for 30 minutes.
  4. In the same pan you will use for the oven, add a drop of olive oil, chopped onion, mushrooms and fry until translucent.
  5. Add the meat and fry until brown to seal the juices. Add the flour and combine it all.
  6. Add your other vegetables. They should all be bite sized pieces and add the remaining ingredients including the broth. Season now with salt if you like.
  7. Place in the oven with a lid or cook on the stove top under a gentle simmer for 1 -2 hours. Mine took 1 hour before my beef was really tender, so check after an hour, if the meat is nice for you. Every oven and every piece of beef is different!
  8. **** If the liquid is not thick enough for your liking, add a drop of water to 1 -2 tablespoons of cornstarch, dissolve it then add to the casserole and give it a stir. Repeat this until you get it as thick as you like. Every one is different!
  9. For Slow Cooker - Place everything in the slow cooker and cook on Low for 6 hours.
  10. When it's ready, serve on it's own or with some mashed potato or cous cous. Delicious!
