Pineapple Corn Rings

  • 8 leave Medium sized Pineapple rings *****( to make the Special Corn fritters out the pineapple rings!)
  • 4 Tablespoons Cornmeal
  • 4 Tablespoons All Purpose Flour
  • 3 - 4 Tablespoons Cold Water
  • 5 Tablespoons Creamed Corn ** If using canned cream corn it may be a thin consistency so do not add any water to the batter. Very Thick consistency
  • 1/2 Tablespoon Vegetable Oil.
  • Pinch of Salt
  • 1 Teaspoon Baking Powder

  1. Add all the ingredients except the pineapple rings to a bowl and whisk. Add the cold water last, and add 1 Tablespoon at a time and whisk until you get a thick consistency, so the batter stays on the back of a spoon. You may not need all the water.
  2. *** You can make fritters without the pineapple, like in my photo above.
  3. Heat a non stick frying pan with a couple of tablespoons of vegetable oil. Submerge the pineapple rings into the batter and then gently place in the pan. Leave the rings in the pan for a minute or two until brown, and then turn them over to brown the other side. Place on kitchen paper to remove excess oil. Do this for all the pineapple rings.
