Grilled Jerk Corn Skewers

  • 2 Corn Cobs
  • 1/2 Eggplant
  • 1 Zucchini / Courgette
  • 8 Medium Mushrooms
  • **** Please note you can swap the vegetables for anything you like, just be sure to cut them all the same size
  • 2 Tablespoons of Jerk Seasoning
  • 2 Tablespoons Olive Oil
The Jerk Seasoning
  • Cup The ingredients below make around 1/2 .
  • 3 Tbsp . sweet paprika
  • 3 Tbsp . garlic powder
  • 1 Tbsp . ground allspice
  • 1 1/2 tsp . ground nutmeg
  • 3/4 tsp . cayenne pepper (more or less depending on preferred spice level)
  • 1 Tbsp . salt
  • 3/4 tsp . freshly ground pepper
  • 2 Teaspoons sugar
  1. Clean the corn, and slice in to 1 inch thick pieces. Wash and prepare the other vegetables and cut to roughly the same thickness.
  2. In a bowl, make up the seasoning by simply adding all the ingredients and combining well.
  3. Place all the vegetable items in a Zip Bag and add the 2 Tablespoons of Jerk Seasoning along with the Olive Oil. Seal the bag and give it a shake so everything is distributed. Place in the fridge until ready for grilling.
  4. Depending on the size of the skewers you have, evenly divide the vegetables between all the skewers and then place on the BBQ, turning until cooked.
Recipe Notes

You can bake this in the oven, on a medium temperature either on the skewers or just spread on a baking tray. It will take around 20 - 25 minutes, until golden.
*** Any left over Jerk seasoning can be stored in an airtight container for several weeks. The recipe above is enough for about 1/2 Cup of seasoning.
