Start with your cookie crust, Crush your cookies into fine pieces and place in bowl with your melted butter. Mix well you want every cookie covered.
Make the cookie dough
For your cookie dough combine your sugar, vanilla, and butter in your mixer on medium to nice and pale, add the remaining ingredients. When they are all incorporated take it out and place your dough in the refrigerator till the dough is stiff enough to make into pieces.
Make the filling
Whip up your whipping cream until stiff peaks. Remove from mixer and put in a large bowl for you will need this bowl to fold everything in.
Whip up your cream cheese, and combine it with your cocoa powder to give it that chocolate flavour.
Now after your cream cheese mix is blended well, fold in your chocolate chips, and slowly and gently fold in your whipped cream.
At this point check to see if your dough is chilled enough so you can make nice firm pieces of it, you will want this for when you bite into your cheesecake every bite has a piece of cookie dough.
When you dough is broken into bite size pieces fold this into the filling gently.
Then pour over your cookie crust and let chill for 4 hours. This will need 4 hours to chill.
