Cheesecake Filling
  • 4 packages of cream cheese
  • 2 tsp vanilla
  • 1/4 cup corn starch
  • 1/4 tsp salt
  • 1 1/4 cup sugar
  • 4 eggs
  • 1 cup heavy cream
  • Crust
  • 1/4 cup butter - melted
  • 1 1/2 cups chocolate wafer cookies without frosting in them. e.g Chocolate Graham's Crakers etc.
  • 1 cup semi-sweet chocolate chips
  • 1 cup chopped pecans
  • 1 cup caramel sauce / Dulce De Leche
  1. Prepare a 8 - 9 inch springform by greasing the inside and wrapping foil on the outside to prevent water entering through during cooking. Set aside.
Make the Crust
  1. Using a rolling pin and place the cookies in a zip bag and bash them until breadcrumbs, or use a food processor.
  2. Add the melted butter to the cookie crumbs
  3. and combine well.Then place the crumbs into a greased 8 - 9 inch Springform pan. Use the back of a spoon and push the crumbs down in the pan to make it firm. If the crumbs are loose, the base may fall apart.
Make the Cheesecake Filling
  1. Preheat oven to 325°
  2. In a large mixing bowl, whip the cream cheese until fluffy then add vanilla, cornstarch, and salt. Whip to combine. Add the sugar and one egg at a time, combining as you are adding the eggs.
  3. Fold in the heavy cream then pour the batter into the pan.
  4. Place the springform pan in a roasting tray and pour hot water into the tray so it comes up about 1/2 way high up the spring form.
  5. Bake the cheesecake for 1 hour and 15 minutes.The centre should have a slight wobble to it.
  6. Remove from oven and add chocolate chips, pecans and caramel sauce / Dulce De Leche
  7. Return to the oven and bake for an extra 15 - 20 minutes.
  8. Remove from oven and allow cheesecake to cool. Once cooled, cover and refrigerate until serving.
