These little apple pastries are such a delight to make and eat.

They are incredibly quick and easy, with a simple list of ingredients and look so pretty!

The addition of caramel laced inside and out take these pastries to another level, and you can eat these caramel apple slices warm or cold, with or without ice cream or whipped cream. You choose!

About the pastry

I always have a packet of frozen Puff Pastry in my freezer for those moments when you need to make something quick, and of course tasty.

As for the pastry, you make my own, which I sometimes do, time allowing.

Here is our flaky pastry recipe.  So you have options to make or to buy!

In this recipe, we're going to see how to make caramel apple slices or small apple pies with caramel.

In the instructions, you will be able to see when you can freeze these mini pastries, (before the baking process).

Then simply pop them in the oven to cook until the puff pastry has become golden brown, puffy and crisp.

This is a great apple pastry recipe and takes no time at all to prepare.

It's very similar to making Danish pastries and in the photos below, you'll see a step by step guide on how to fold and get the pattern for a small pastry.

Ingredients

16 oz or 450 g Flaky or Puff Pastry. See here to make your own flaky pie crust recipe 

*** If making your own home made flaky pastry recipe, the amount of pastry in the recipe needs to be doubled so you can get 10 pieces.
If you have too much pastry, it will freeze nicely if wrapped in plastic wrap and a zip lock bag.

The Filling

2 Granny Smith Apples, peeled and sliced.
4 Tablespoons Light Brown Sugar
¼ Teaspoon Cinnamon (or more if you like!)
1 Teaspoon Lemon Juice
4 Tablespoons Dulce De Leche. See Here To make your own Dulce De Leche
2 Tablespoons Milk

Variations

You can also sprinkle a few raisins or other dried fruits in with the apple.

Instructions

1. First, if you are making your own pastry, do that and let it rest in the fridge for 30 minutes.

2. Preheat your oven to 200 C, 400 F
Prepare all the ingredients. Peel and slice the apples (about ½ inch thick slices) like in the photos, and then halve each slice.

Place in a bowl and add the lemon juice, cinnamon and HALF of the brown sugar. Mix so the apple slices are coated.

3. Cut out 10 squares of pastry, measuring approx 3 inches by 3 inches and place on parchment, a baking sheet.

4. Line up 4 - 5 apple pieces down the center of each pastry square, then using a sharp knife, cut 4 slits on both sides of the row of apples, at an angle like the photos, and repeat for all the 10 pastry squares.

5. Brush the sides of all the squares with some milk or beaten egg, then using a teaspoon, drizzle a little Dulce De Leche along each row of apples. Don't worry if some of the caramel falls down the sides. It will be ok.

6. Now to fold the pastries. Start with the top left piece, and fold in to the center.

Then take the top right piece, and fold in to the center so it is on top of the left piece.

Repeat all the way down the pastry so it looks like it is 'woven'.

Note:

It is at this point, once you have shaped the mini pastries, you can freeze them.

Simply pop them on a baking sheet and place in the freezer until solid. Once solid, transfer to an airtight freezer bag and return to the freezer.

When you are ready to use them, follow the steps from point 7 below as normal. You can cook these from frozen. Just make sure your oven is preheated.

7. Brush the tops with milk, and sprinkle the remaining brown sugar over the tops and place in the oven for approx 20 - 25 minutes or until golden brown.

Remove from the oven, and with the teaspoon, drizzle the remaining Dulce De Leche over the tops of the pastries, then place on a cooling rack.

WARNING: Please DO NOT bite into one of these as soon as it is out of the oven. It will be VERY HOT!!


You can serve these on their own, warm or cold, on their own, or with some nice vanilla ice cream, or whipped cream. They are wonderful!

    1. Hi Lisa, yes indeed. These are very versatile. Just make sure you don’t over fill as the pie filling can be quite runny and spread in the baking pan (horrible rotry clean after!!)

    1. Hi Ash, Yes indeed! I have frozen them and actually baked from frozen. All you need to do is brush the tops before popping in the oven, as per the recipe and they will be fine. The cook time should be pretty much the same, maybe a few minutes longer, but no more as they are only small.

      On another note, not sure if you’re looking for savory things too, I have a super popular recipe for Bacon, Cheddar & Zucchini Bread, which you can make in little muffins (it is all in the recipe), and they freeze really well. All you need to do is bring them back to room temperature before serving. You can serve warm or cold, and are great for gatherings!
