Here, Cathy's Lime Jello Delight comes from her Grandma Conklin and is enjoyed by all generations.
Cathy's grandchildren always enjoy helping her make this dish for the holidays and the hardest part for the children is waiting for it to set in the fridge! It's an easy recipe and full of goodies, so please do enjoy!

Cook Time: Nil - Refrigerate for 2 - 4 hours

Yield: 6 - 8 servings
Ingredients
1 large 20 oz can crushed pineapple
15 large or 1-½ cups miniature marshmallows
1 x 3-ounce package lime Jello
1 cup cottage cheese
½ cup chopped nuts
1 cup heavy whipping cream (not whipped)
Instructions:
1. Drain pineapple juice into a measuring cup.
2. Add water to the juice to make 1-½ cups juice.
3. In a medium saucepan, boil juice for 1 minute.
4. Add marshmallows and stir constantly until melted.
5. Add the lime jello powder and stir constantly until dissolved.
6. Put the saucepan in the fridge and let the mixture cool until thickened (about 20 minutes).
7. Stir in crushed pineapple, cottage cheese, nuts, and whipping cream.
8. Pour into serving dish and refrigerate until set.

- 1 oz large 20 can crushed pineapple
