Here, Michele has made her Easy Meatloaf with BBQ Sauce. It's a very easy recipe and so flexible, you can adjust according to your taste, and add different seasonings and ingredients.

Here, Michele also makes her own BBQ Sauce, to pour over the top of the meatloaf. Delicious!
Recipe by Michele Stuart
Prep Time: 5 minutes
Cook Time: 1 hour 15 minutes
Yield: 4 - 6 persons
Ingredients
For the Meatloaf:
1 ½ lbs ground beef – you can add ground pork as well
6 oz box of sage or chicken stuffing. I use Kraft Stove Top Brand.
1 egg
10 oz can of concentrate tomato soup (optional)
1 Medium diced onion
7 slices of bacon (enough to cover the top of the pan you will use)
Garlic, season salt, basil, Italian parsley to taste
1 Tablespoon Worcestershire sauce
For the BBQ Sauce:
1 ½ cups Ketchup
½ cup honey or grape jelly
1 tablespoon of mustard powder (I use hot mustard powder)
Instructions
1. Preheat oven to 350F
2. In a bowl, place all the meatloaf ingredients and combine well, use either your hands or a good spoon.
3. Place the mixture in a 6 x 12 inch baking pan.
4. Lay the bacon slices over the top of the meatloaf.
5. Make the BBQ Sauce by adding all the sauce ingredients to a bowl and mixing well.
6. Spread the BBQ sauce over the top of the bacon so it is all covered.
7. Place foil over the top of the meatloaf and place in the oven for 1 hour. Then remove the foil and bake for a further 15 minutes to crisp and brown up.
Serve warm and enjoy!
