Recipe by Dave Weigel
Prep Time: 10 minutes
Cook Time: 10 minutes
Yield: 1 1/2 cups
1 large onion sliced thin
3 tablespoons butter ( yeah it’s a lot but hey it’s butter!)
2 cloves garlic chopped fine or 1 teaspoon fine chopped garlic from a jar
1 teaspoon sugar
8 oz cream cheese at room temperature
1 teaspoon honey
1/4 cup heavy cream (add just enough to smooth out the mix).
1. Melt the butter in 12 inch frying pan and add sliced onion. Fry over medium heat until almost fully caramelized then add the sugar to help the caramelization. Add the chopped garlic and finish frying till onions are a dark sweet caramelized mass of yumminess.
2. In a food processor, put all of the ingredients in and whiz until smooth. Leave a bit of the onion mix out until almost smooth and add at the end if you want some bigger chunks. Please note, add the heavy cream in stages as you blend, so you can get the consistency you like. The more cream you add, the looser the dip will be.
